The whole moniker of stable and beta builds aren't really all that meaningful. There could be a bug in a "stable" build of it and you might never have issues with a beta build. This is especially true with an application like Sickbeard since it is python based, it won't crash in some catastrophic way as to bring down your system.
You are better off upgrading, Sickbeard generally is about fixing bugs now and I haven't seen too many new ones that have been introduced. As far as stability is concerned the newest GIT version even is probably more bug free than any older version.
