I have been running Openelec 1.0.2 to watch and download TV shows for months without issue, but recently Sickbeard is starting failing to pick up new shows.
I have looked this up and it appears to be because the scenes have moved away from xvid to h264 and the old version of SB not recognising them.
Is the only solution to move to a beta build?

The whole family use this XBMC on a daily basis, so I am nervous about upgrading to an unstable build and causing them issues.

I've seen the same issue, initially I updated all my shows quality settings to 'Any' to allow for HD files to be downloaded, then I began worrying about the file sizes.

I've 'Just' changed this so that it accepts 'Unknown' quality settings, and for the few it's downloaded since they've been fine. Not a perfect solution but so far it's working for me.

The whole moniker of stable and beta builds aren't really all that meaningful. There could be a bug in a "stable" build of it and you might never have issues with a beta build. This is especially true with an application like Sickbeard since it is python based, it won't crash in some catastrophic way as to bring down your system.

You are better off upgrading, Sickbeard generally is about fixing bugs now and I haven't seen too many new ones that have been introduced. As far as stability is concerned the newest GIT version even is probably more bug free than any older version.

If you're downloading using torrents I would recommend using Automatic instead of SickBeard.
Automatic isn't as fancy as SickBeard as it has no GUI. But is much better for my use as it lets me choose my own sources and releases by creating my own rules.
